Origin
Gum Karaya (gum sterculia) is the gum-exudation of different species of Sterculia trees. The harvesting areas are mostly situated in West-Africa and India.
Properties
Gum Karaya is of 100% plant origin.
The gum has a distinctive odour of acetic acid.
When mixed with water, gum karaya produces a mucilage of variable colour and transparence, depending on the grade used.
Uses
Gum Karaya has been used for a long time in traditional African an Indian cooking, mainly for its preventive, curative and texturizing properties. Today it is essentially used in the pharmaceutical field.
Its application in the food industry is the same as for gum tragacanth.
