HERBACEL CLASSIC DIETARY FIBRES
Herbacel Classic dietary fibres are made of fibre rich parts of fruits, vegetables or cereals. The dietary fibre content varies between 55 and 75 %, depending on the raw material. The dietary fibres comprise mainly of non-starch polysaccharides forming the cell walls. Different amounts of plant own sugars, starch, protein or lipids can also be found. Additionally, secondary plant metabolits like polyphenols, carotenoids or anthocyans contribute to characteristic behaviour concerning the flavour, colour or taste of the fibres.
HERBACEL Classic AF
(Apple fibre)
Apple fibre is made of juice extracted and carefully dried apples from selected growing areas. It has a characteristically pleasant apple flavour. The total fibre content according to the AOAC method is approx. 60%, of which 46% are in the form of insoluble dietary fibres and 14% as soluble dietary fibres, mainly pectin.
Digestible carbohydrates are present in the form of the natural sugars found in apples, particularly fructose. There is also a relatively large proportion of potassium and calcium.
Apple fibre is available in various particle sizes. The balanced fibre spectrum and pleasant organoleptic characteristics make it extremely useful. Applications include bread and baked goods, e.g. short crust pastry and gingerbread, cereal and fruit bars and fruit preparations.
HERBACEL Classic CF
(Lemon fibre)
Lemon fibre is made from juice extracted, carefully dried lemon peels with dried fruit pulp. It comes in the form of a light yellow to yellow powder in different particle sizes and has a total fibre content (AOAC) of approx. 70%. The soluble fraction (25%) is remarkably high.
The odour is practically neutral with a weak characteristic lemon hint and the flavour is bittersweet with a slight terpenic note. In view of its organoleptic and nutritional properties it is ideal on its own or in combination with other types of fibre for fibre enrichment of drinks, fruit preparations or fruit and cereal bars.

HERBACEL Classic OF
(Orange fibre)
| Orange fibre comes in the form of a light yellow to yellow powder in different particle sizes. It has the typically bittersweet taste of orange peel and the typical orange flavour. It is made from juice extracted, carefully dried orange peels with dried fruit pulp. With a total fibre content of approx. 70% the soluble proportion is noticeably high (30%). In view of its organoleptic properties this product is extremely suitable for fibre enrichment on its own or in combination with other types of fibre. Typical applications include fruit or cereal bars, non-perishable baked products, snacks and fruit preparations.

It comes in the form of a dark purple powder in different particle sizes and is notable for its high total fibre content of approx. 80% (AOAC) of which 10% is soluble. |
HERBACEL Classic VF
(Aronia fibre)
Aronia fibre is made from juice extracted, carefully dried aronia berries and comes in the form of a dark reddish purple powder in different particle sizes. Because of its low acid content the fibre has a very pleasant flavour and odour and is also notable for its balanced fibre spectrum of approx. 70%, of which 10% are in soluble form. Other advantages of aronia fibre are its very good colouring properties, high vitamin C and bioflavonoid content.
HERBACEL Classic HF
(Oat fibre)
Classic Oat fibre is made from oat bran and oat husk. The colour is light brown. Due to the pleasant taste and smell to cereals you can use this fibre for bakery products and muesli bars. The dietary fibre content is approx. 88 %. Beside the oat fibre Herbacel Classic HF 01 we also offer oat bran (Herbacel HF 12) with a high content of ß-Glucan up to 12 % which is of interest for suppliers of functional foods.
HERBACEL CLASSIC PLUS DIETARY FIBRES
Herbacel Classic Plus dietary fibres made of fibre rich parts of fruits, vegetables or cereals are nearly neutral in flavour and taste.
Their dietary fibre content varies between 80 and 92 %, depending on the raw material. The dietary fibres comprise of mainly non-starch polysaccharides. Plant own sugars, starch, protein, lipids and secondary plant metabolits (which may limit the use of Classic fibres) are removed by physical treatment. These products are designed to enrich food with fibres without changing the typical flavour and taste of the products.
HERBACEL Classic Plus EF
(Pea fibre)
Pea fibre is a food product made from the cleaned pods of peas which have been carefully selected on the basis of hygienic criteria. The finished product is a light, finely ground powder with neutral organoleptic characteristics. The fibre content of around 90% is very high, with soluble dietary fibres accounting for 8%. It is made by grinding and separating and is ideal for use in all types of food, particularly extruded products, baked and fancy goods and pastries. Because of its neutral colour and flavour it can be used in high concentration without any effect on the finished product. Some extruded products can contain up to 10% pea fibre.
HERBACEL Classic Plus HF
(Oat fibre)
In contrast to normal oat bran Herbacel Classic Plus HF fibres are high fibre food products (up to 98 % according to AOAC) with a large proportion of insoluble dietary fibre. Due to the extreme neutral sensory quality of these products they can be applied in all fields of food industry.
Well-known application fields are bread - here an addition of 5 - 10 % related to flour can be used without altering the dough or baking properties -, as well as biscuits, cookies and muffins. Oat fibres are also successfully applied in extruded products, snacks, chips and tortillas. The microfine oat fibres are mainly applied in beverages.
Oat fibres are well accepted for fibre fortification of food products and nutraceuticals and as an energy/fat reducing component in light products.
HERBACEL AQ PLUS DIETARY FIBRES
Herbacel AQ Plus dietary fibres made of fibre rich parts of fruits, vegetables or cereals are nearly neutral in flavour and taste. The dietary fibre content varies between 85 and 92 %, depending on the raw material. The high dietary fibre content results mainly from non-starch polysaccharides of cell walls. Using a special technology the strong binding of the cell wall components (cellulose, hemicellulose and pectin) are partially expanded. This leads to enhanced nutritional and technological properties compared to the Classic fibres. The interaction with other ingredients, especially with water is improved.
HERBACEL AQ PLUS
(Apple Fibre and Citrus Fibre)
The dietary fibres Herbacel AQ Plus are multi-purpose fruit fibres derived from apples and citrus fruits. These dietary fibres are subjected to a subsequent purposeful and careful treatment in order to preserve an optimum of nutritional and technological properties. The high dietary fibre content of approximately 90 % (15 % of which are soluble), the high water retention capacity up to 17 g/g fibre and the cold soaking qualities are unmatched in fibres today.
Beside traditional application fields such as bakery goods (dietary fibre enrichment, fresh keeping, improved crumb and crust qualities, volume enhancement) these fibres are well appreciated for applications in soups, sauces, frozen foods, desserts or fruit preparations. The fibres support thickening and stabilizing properties and reduce tendency to syneresis in yoghurts and cremes
